QUESADA RECIPES: Huevos Rancheros

With Valentine’s Day coming up on Sunday February 14th who wouldn’t love to be served breakfast in bed? Surprise your sweetheart  with some delicious Huevos Rancheros! These Mexican-style eggs are easy to make and you can customize them with whatever you have on hand! Savoury, and as spicy as you want them–they’re the perfect mix for Valentine’s Day!

Serves 1

1 Tbsp butter

2 eggs

Salt & pepper

2 6” corn tortillas or 1 8” flour tortilla

¼ cup refried beans

2-3 Tbsp salsa

¼ cup shredded cheese (Cheddar, Monterey Jack or crumbled Feta)

½ avocado, sliced or mashed, or 2 Tbsp guacamole

2 Tbsp pickled onions

1 Tbsp chopped cilantro or parsley

3-4 slices fresh or pickled jalapeno

In a medium non-stick sauté pan, melt butter over medium heat. When butter is bubbling, crack eggs into pan, season with salt and pepper and let them cook sunny-side up for about 3-4 minutes, or until the egg whites are set.

While the eggs are cooking, warm tortillas in the microwave for 10 seconds, then place them on your serving plate. Heat refried beans in microwave for 30 seconds. Spread refried beans on tortillas.

Once eggs are cooked, place them on top of tortillas, then start adding the topping, casually distributing them all over the eggs: salsa, cheese, avocado, pickled onions, cilantro or parsley and jalapeno.

Serve immediately.

Missing some ingredients? Use what you have on hand!

Don’t have refried beans? Use canned black or pinto beans instead.

You can also top them with all sorts of other ingredients, like diced tomatoes, sliced peppers, corn, sliced green onion, hot sauce, sour cream or crushed tortilla chips!

When cooking eggs, timing is everything! Don’t forget to make the coffee before you start preparing the eggs!
