Mexican-Spiced Sweet Potatoes

Mix it up a bit with these easy and delicious Mexican-Spiced Sweet Potatoes. They have that sweet-heat flavour that everyone loves! Serve it as a side dish at your next holiday gathering, or simply as a great everyday vegan option for tacos. 

 

2 lbs Sweet Potatoes (about 3 medium)

2 Tbsp Canola Oil

1 Tbsp Chili Powder

1 tsp Chipotle Powder

½ tsp Salt 

 

Preheat oven to 425°F

Scrub sweet potatoes clean (no need to peel), then dice into 1 inch pieces. 

Place in a medium sized mixing bowl and toss with canola oil. 

Add chili powder, chipotle powder and salt and toss until evenly coated. 

Spread evenly onto a parchment-lined baking sheet and roast for 20 minutes. Toss with a spatula, then roast for another 20 minutes, or until done — they should be soft on the inside and slightly browned on the outside.

Serve on their own or make them extra special with a side of Chipotle Mayo–just mix 1 tsp of chipotle powder into ½ cup of mayonnaise. 

Tip: Prepare Chipotle Mayo first to allow the flavours to meld while you make the sweet potatoes.
