Festive Cranberry Salsa
Makes: about 4 cups
If you love the combination of spicy and sweet, then this simple salsa is for you!
Fresh, spicy salsa with a sweet burst of cranberries–this is going to be your go-to recipe for the holidays!
4-5 medium ripe tomatoes, finely diced
1 cup canned cranberries
½ cup diced onions
2 canned chipotle peppers in adobo sauce, minced (more or less, depending on how spicy you like it)
1 tsp salt
2 tbsp chopped fresh cilantro
Combine all ingredients in a bowl and refrigerate for at least 2 hours to allow the flavours to meld. Taste, and add more salt and/or chipotle peppers, if necessary.
Serve with your favourite tortilla chips.
Tip: In a hurry? For super-fast Cranberry Salsa, add 1 cup canned cranberries to 2 cups store-bought spicy salsa. Taste and add salt, if necessary.
